Squash is not just an interesting vegetable, it is also very versatile. The different varieties of squash like pumpkins, zucchinis, courgettes, and marrows belong to the genus Cucurbita. There are also called buttercup squash, cushaw squash, hubbard squash, acorn squash, autumn squash, summer squash and winter squash.
In most of the varieties, it is simplified into either summer squash, winter squash, or gourds. Gourds considered as the largest groups of squash and the oldest cultivated crops on earth, with archaeological data tracing its origins back to 10,000 years ago in Mesoamerica.
